- 1/quart of milk
- 1/2 cup Carolina rice
- 3 heaping tbs. sugar
- 1 lemon peel
- 1/2 pkg. vanilla pudding (NOT INSTANT)
- 2 egg yolks
- Dash of cinnamon
- Simmer milk, rice, sugar, lemon peel until rice gets soft. Add more milk as necessary.
- When rice is soft add 1/2 package of pudding and stir.
- Beat 2 egg yolks
- Add egg yolks to rice mixture and stir
- Put in glass dish, sprinkle with cinnamon and refrigerate before serving.
