8 cups Vegetable or chicken stock
1 pkg Mirepoix or Soffritto mix from grocery store
1/2 cup Carrots diced
1/2 cup Zucchini diced (seeds removed)
1 can Diced tomato (14 oz)
1 can Cannellini beans (14 oz)
1/3 cup Orzo or small size pasta
1/2 cup Spinach chopped
1 tbs Basil chopped
1tbs Italian parsley chopped
1 tsp Italian seasoning
3 Garlic cloves chopped
Saute carrots & mirepoix for 5 - 8 minutes. Add garlic and all herbs cook for 3 min more. Add stock and tomato and bring to a boil. Add orzo and reduce to a simmer until cooked. Turn off heat & add spinach and zucchini and leave covered for 30 - 60 min.
