Rice Pudding


  • 1 quart of milk

  • 1/2 cup of Carolina rice

  • 2 egg yolks

  • 3 heaping tbs. of sugar

  • 1 lemon peel

  • 1/2 pkg. vanilla pudding (NOT INSTANT)

  1. Simmer milk, rice, sugar, lemon peel until rice gets soft. Add more milk as necessary.

  2. When rice is soft add 1/2 pckg. of vanilla pudding and stir.

  3. Beat 2 egg yolks and add to the rice mixture. Stir a couple of times.

  4. Put in a glass dish and sprinkle with Cinnamon.

  5. Refrigerate for until cold.
