1 quart of milk
1/2 cup of Carolina rice
2 egg yolks
3 heaping tbs. of sugar
1 lemon peel
1/2 pkg. vanilla pudding (NOT INSTANT)
Simmer milk, rice, sugar, lemon peel until rice gets soft. Add more milk as necessary.
When rice is soft add 1/2 pckg. of vanilla pudding and stir.
Beat 2 egg yolks and add to the rice mixture. Stir a couple of times.
Put in a glass dish and sprinkle with Cinnamon.
Refrigerate for until cold.
