Bulgur

1 large chopped onion

1 8oz. can of stewed or diced tomatoes (if you use stewed chop up the tomatoes into small pieces)

1 handful of fresh grape tomatoes (chopped)

1 cup of bulgur (fine)

2 tbs. olive oil

2 cups of water (add more if needed)

Salt and pepper to taste


- Sauté onion in olive oil

- Add can of tomatoes and fresh chopped grape tomatoes

- Sauté for a few minutes

- Add bulgur, some salt and pepper and stir

- Add 2 cups of water and cover

- If toward the end the bulgur is not cooked enough add another 1/2 cup of water and cover until liquid is absorbed
