1 large bag of peas (1 pound)
3/4 cup of chopped carrots
1 large onion chopped finely
6 whole artichoke hearts cubed
1 potato cubed
1 10-12 oz can of diced tomatoes
1 handful of chopped grape tomatoes
1/2 cup of Olive oil
Salt (to taste)
Pepper (to taste)
3/4 cup chopped dill
- Sauté chopped onions in olive oil for 3-5 minutes
- Add carrots, potatoes, handful of chopped grape tomatoes, artichokes, dill, salt and pepper and sauté for another 5-8 minutes
- add peas and stir well so all of the peas are covered in olive oil
- add some water (enough so peas are covered)
- close lid and cook for 30 minutes (stirring occasionally)
