Mama's Spanokopita

2 lb. of chopped spinach

1 lb. crumbled feta cheese

1 small finely chopped onion

1 8 oz. package of cream cheese

1/2 cup of romano

4 eggs (slightly beaten)

3 tbs. olive oil

2-3 tbs. of chopped dill

1/2 teaspoon of pepper

1/2 lb. butter (melted)

15 sheets of fila (#7)


-pre-heat oven at 350 degrees

- Squeeze all water out of frozen spinach

- Sprinkle with salt and allow it to stand for 15 minutes

- Combine spinach with cheese, onion, eggs, olive oil and salt and pepper to taste

- Arrange 9 fila sheets in a greased 10x15 pan, placing melted butter between each sheet

- Cover fila with spinach filling

- Place 6 fila sheets on top of spinach filling brushing on butter between each sheet of fila and on top

- Brush top with melted butter

- Bake at 350 degrees for 45 minutes
